Paaya (Goat Trotters Stew) Recipe

Ingredients for Paaya:

  • 4 goat trotters (paaya), cleaned and cut into pieces
  • 1 cup wheat flour (optional for thickening)
  • 2 large onions, finely chopped
  • 3 tomatoes, chopped
  • 4 tablespoons ghee or cooking oil
  • 1 tablespoon ginger-garlic paste
  • 2 teaspoons red chili powder
  • 1 teaspoon turmeric powder
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • Ginger slices (for garnish)
  • Green chilies, sliced (for garnish)
  • Lemon wedges (for serving)

Instructions:

1. Clean and Prepare Trotters:

a. Clean the goat trotters thoroughly. You can ask your butcher to clean and cut them into pieces.

b. If using wheat flour for thickening, mix it with water to make a smooth paste.

2. Cook Trotters:

a. In a large pot, add the cleaned trotters and enough water to cover them.

b. Bring to a boil and then simmer on low heat until the trotters are tender. This may take 2-3 hours. You can also use a pressure cooker to expedite the process.

c. If using wheat flour for thickening, add the paste and cook for an additional 15-20 minutes until the stew thickens.

3. Prepare the Base:

a. In a separate pan, heat ghee or oil. Add chopped onions and sauté until golden brown.

b. Add ginger-garlic paste and sauté until the raw smell disappears.

c. Add chopped tomatoes and cook until they become soft and the oil starts to separate.

4. Add Spices:

a. Add red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Cook the masala until it releases a rich aroma.

5. Combine Trotters with Base:

a. Transfer the cooked trotters along with the stock to the masala base. Mix well.

b. Add garam masala and let the stew simmer for another 15-20 minutes, allowing the flavors to meld.

6. Garnish and Serve:

a. Garnish with chopped coriander leaves, ginger slices, and sliced green chilies.

b. Serve hot with naan, roti, or steamed rice.

c. Provide lemon wedges on the side for an extra burst of flavor.
